In the upstairs loft called ‘The Attic’ at Eddie McStiff’s, we offer the best bar wings in town! We choose only to use the meatiest, juiciest chicken wings and we make all three of our mouth watering sauces from scratch. We would like to share these recipes with you!

Chicken wing preparation:

Start with 25-30 chicken wings (allow 1-2 hours to defrost). In a deep sauce or sauté pan, heat vegetable oil to 350 deg.
Batch wings depending on the size of your cookware. Cook wings for about 8 minutes or until golden brown. Toss with your sauce of choice.

Asian Sauce

You will need:
1 minced yellow onion
½ cup honey
¼ cup soy sauce
¼ cup butter (clarified)
½ cup brown sugar
2 tsp. dried wasabi powder
2 tbsp. toasted sesame seeds

Directions:
Combine butter, brown sugar and honey in a microwave safe container and cover with plastic. Cook on high until mixture is melted (1-2 minutes). Stir very well. Add minced onion, soy sauce and wasabi powder and mix well. Microwave again for 30-60 seconds. Stir sauce and toss with chicken wings. Follow chicken wing instructions above. Top with toasted sesame seeds.
We suggest you compliment the Asian wings with a wasabi miso dipping sauce. Just pick up a jar of our famous Miso dressing and stir in some wasabi powder to taste.


Lime-Cilantro BBQ Sauce

You will need:
1 sprig of fresh cilantro chopped.
¼ cup lime juice (fresh pref.)
1 tsp. powdered garlic
5 cups of your favorite BBQ sauce
Salt and pepper
Directions: Combine BBQ sauce, cilantro, garlic powder and lime juice in a bowl. Mix well. Add salt and pepper to taste. Stir sauce and toss with chicken wings. Follow chicken wing instructions above. Serve with ranch and fresh celery sticks.

Traditional Spicy Buffalo

You will need:
2 tbsp. jalapeno juice
1 cup butter (clarified)
½ tsp. cayenne pepper
2 cups favorite hot sauce

Directions:
Melt butter in a microwave safe container and cover with plastic. Add jalapeno juice, hot sauce and cayenne pepper and mix until consistent. Toss with chicken wings. Follow chicken wing instructions above. Serve with ranch and fresh celery sticks. Garnish with bleu cheese and fresh celery sticks.
